For the girls!

1lb sausage (I used spicy, local ground sausage from Ted’s Butcherblock)
2 peppers - I chose red, diced
1 yellow onion - diced
8 eggs
½ cup milk
1 cup cheddar cheese
½ tsp red chili flakes
Salt + pepper
In a cast iron, saute the sausage, peppers and onion in olive oil until cooked. Whisk together the eggs with the milk and pour it over. Make sure it is even, you can mix it together. Sprinkle the cheese over it with salt, pepper and chili flakes.
Remove from heat and bake in a 400 degree oven for 15-25 minutes, until the middle is set and the edges are slightly golden.
