Except ours are made with honey + sweet potatoes - two of my greatest loves.
1 cup honey
1 cup brown sugar
2 cup peanut butter
1 ½ tsp salt
7 ½ cups rice krispies
1 cup dark chocolate chips
1 ½ cups butterscotch chips
¾ cup sweet potato puree
flake salt for topping
Over medium heat on the stove melt the honey + brown sugar until it is bubbly. Add in the peanut butter and stir until it’s integrated and melty. Remove from heat and add in the salt and the rice krispies.
Press this mixture into a parchment lined 9x9 square. REALLY push it down and in, use your muscles to pack it in. Once it’s in and smooth, move onto the topping.
Melt the dark chocolate chips, butterscotch + sweet potatoes together in the same pot over medium heat. Once melted and combined, pour over the packed dough and spread evenly. Sprinkle it with flake salt. Let cool completely until hardened in the fridge (best to do this overnight)
Once cool, cut into 16 squares.
