SPINACH PESTO

Harken

This is a great component recipe - you can add mayo and make it a sandwich spread, or add chickpeas + tahini and make hummus! The world is your spinach pesto oyster. 





4 cups spinach (packed)

1 cup basil 

2 cloves garlic 

½ cup EVOO

1 lemon - zest and juice 

1 tsp salt

1 tsp sugar


Process everything together in your food processor. Eat on everything.
