I love how easy this cake is - and you can really put any sort of fruit you want on top. You could even swirl jam in if you want. But in honor of the season, it’s strawberries for me. This comes together quickly so be ready to dive in + eat. Once you’ve had it with your coffee, enjoy it with chilled rosé.
1/4lb butter
1 cup sugar
1 egg
1 ½ cups flour
½ tsp salt
½ cup buttermilk
1 TB orange zest
2 cups strawberries - chopped
Raw sugar
Melt the butter + then mix it with the sugar and egg. Add in the flour + salt, then whisk in the buttermilk + orange zest. Pour into a greased cake tin, pie pan or a springform pan for easiest removal. Top with the strawberries + sprinkle with 2-4 TB raw sugar.
Bake at 325 for 45-60 minutes, until the middle top does not sink down and a knife comes out clean.
